Gosia from @Enjoy.the_little_things is a positive person who is always looking on the bright side of life. She enjoys the little things in life, especially sweets, fruits and baking! She created this happy peach recipe for us to share with you! Ricepeach Muffin RecipeIngredients (for 12 muffins):

  • 250g white whole wheat flour or gluten free flour 
  • 2 flat teaspoons of baking powder 
  • A pinch of salt 
  • 2 large eggs 
  • 100g of brown cane sugar 
  • 2 teaspoon of vanilla extract 
  • 250ml of milk 
  • 125g of butter, melted and cooled 
  • 4 peaches, seedless and cut into small pieces 
  • 5 tablespoons of powedered sugar oil or butter to grease the tins 
  • Method: Preheat your oven to 180°C and grease your cupcake/muffin tins with some butter or cooking oil. Start by sifting the flour together with baking poweder and salt. Whisk the eggs, sugar, vanilla extract, milk, and butter in a mixer at medium speed. If you do not have a mixer, you can use a hand whisk. Make sure that the mixture is smooth. Gradually add the dry ingredients whilst continuing to whisk gently until the mixture is smooth and creamy. Put a few pieces of peach at the bottom of each cupcake/muffin tins then fill them with the cake batter and sprinkle with powedered sugar. Bake for around 20 minutes, until the muffins are browned on top and cooked through. Cool your cakes and enjoy!
