Riceananas is a super-sweet pinneaple who loves tropical fruits. This week, we have collaborated with @vegantoastie to bring you this tropical flatbread recipe and add a bit of sunshine to these cold months. Veerle from @vegantoastie is a vegan foodie from the Netherlands who loves to experiment with baking, using beautiful colours and flavours to make vegan baking exciting and accessible! This recipe is one she found while messing around with ingredients, and it's delicious! To make your own tropical flatbreads, follow Veerle's recipe below.

Tropical Flatbread Recipe

Ingredients: (for the flatbread)

1 flax egg (1 tbsp ground flax + 3 tbsp hot water)

1 tsp vanilla extract

Pinch of salt

1/2 cup oat flour

1 tbsp maple syrup

2 tbsp soy milk (for the topping)

1/4 cup coconut yoghurt Banana Pineapple rings maple syrup toasted coconut

Method:

Preheat your oven to 200°C. Firstly, prepare your flax egg by adding 1 tbsp of ground flax to 3 tbsp hot water in a bowl. Stir and set aside. When the flax egg is ready (it will have an egg-like consistency, rather slimy) add the vanilla extract and the pinch of salt. Mix well. Next, add 1/4 cup of oat flour to the mixture and mix a little. Now add your soy milk and maple syrup to the batter, mix until well combined. And lastly, add the other 1/4 cup of oat flour and mix until well-combined. Spread the batter onto a baking sheet. Bake for 20 minutes. While you're waiting for your flatbread to come out of the oven, start preparing your toppings. Place a couple of pineapple rings on a piece of kitchen paper and tap them dry. Cut the rings into smaller pieces and brush them with some maple syrup. Preheat your grill pan. Once heated, place the maple-coated pineapple in the pan. While the first side is caramelizing, brush the other side with maple syrup. And once the first side is done - this will take a few minutes, depending on how hot your pan is, flip the pineapple. Once the flatbread has come out of the oven, let cool for a moment. And once cooled, assemble by spreading the coconut yoghurt on top of the flatbread and topping it with some sliced bananas, the grilled pineapple and sprinkle over some toasted coconut. Enjoy!
